Le tradizioni contadine di Sogliano al Rubicone, di probabili origini medioevali, testimoniano l'usanza di "affittare" le fosse di tufo, utilizzate per la conservazione del grano, ai proprietari del formaggio e permetterne l'infossatura come metodo di stagionatura. Le fosse sono ambienti a forma tronco conica o a forma di fiasco alte circa 3 mt. dal diametro di circa 2 mt. scavate nel tufo dell'abitato Soglianese, ove singolari condizioni di temperatura ed umidità creano l'ambiente ideale perchè avvengano numerose trasformazioni chimiche, fisiche e microbiologiche che rendono un normale formaggio in quel prodotto inconfondibile che è il "Formaggio di Fossa di Sogliano D.O.P.". Anche l'Antica Cascina stagiona i suoi migliori formaggi di pecora nelle famose fosse e dopo 80 - 100 gg di permanenza le forme tornano alla luce rimodellate, si presentano unte e contorte e diffondono un aroma unico ed inconfondibile. It is popping up in more places for the home cook and you meat fans to get hold of, with even Marks and Sparks jumping on the bandwagon. The Tomahawk Steak is an on-the bone Rib Steak, cut from the Fore-rib with the entire rib bone left. The long bone is french-trimmed, leaving an amazing presentation, and dinner table discussion point. As it is bone-in Rib Steak, it has quite a large amount of inter-muscular fat, which gives it a load of flavour when cooked, as flavours are released from both the huge bone, and inter-muscular fat during roasting to give a sweet gelatinous flavour. The Tomahawk is cut based on the thickness of the rib bone and is usually 5cm/2 inches thick, weighing approx 1.2kg. A Tomahawk makes an ideal sharing steak for a special occasion or romantic meal, as it can easily feed two people. Delicious Pasta Bottarga Recipe! (makes 1 serving)

 

  1. Precook 2 Oz (2 oz when dry) Spaghetti al dente, rinse & set aside
  2. Fry one or two cloves of minced garlic in 2 tbsp of hot olive oil, in a medium sized frying pan on medium to high heat. Let fry for a minute or so, or just before garlic starts to brown.
  3. (Optional) Throw in a handful of raw arugula, and fry until the leaves have fallen.
  4. Add pre-cooked, strained al dente spaghetti to the hot pan along with the frying garlic & cooked arugula.
  5. Toss gently to get the spaghetti coated in the hot olive oil, garlic & arugula. Add salt & fresh ground pepper to taste, then transfer to dish.
  6. Grate 1tbsp of Bottarga on top of hot pasta & 1 tsp of lemon zest.
  7. Toss everything together in plate, & Enjoy!
